Pan-seared Sea Bass w/ Spinach and Mushrooms
Like I stated in my last post, I rely on easy recipes after busy days in the hospital. After indulging in my bone-in rib eye with blue cheese/onion sauce, I needed a light meal haha! So, here is my following grocery list: shiitake mushrooms, sea bass, garlic, and spinach.
I always purchase these ingredients when I am browsing at Whole Foods Market. I'm like a kid in a candy store...
First, I usually mince 4-5 cloves of garlic and place them in a medium hot pan, with a little olive oil and a couple dashes of worcestershire sauce. I add the shiitake mushrooms, a little salt, pepper, and garlic powder, and cook them for approximately 5 minutes...
Lastly, I add the baby spinach to the mixture, with a little more salt and pepper, and wait until they wilt...
Ok, on to the fish. I learned to peel off the skin with one swoop after watching a couple of episodes of Iron Chef America...
I add a little salt and pepper on each side before placing them in a medium-hot pan with a little olive oil. I pan sear the fish for approximately 3-5 minutes on each side and finish it off in the oven depending on the thickness...
With a glass of Chardonnay close by...
Here is another look when I made this meal for Mr. Man. Oh, how I miss my gas stove at home...
I just love the "meaty" and "flaky" nature of this fish...I would call this "light comfort food." Enjoy!
