Panko Chicken Breasts
Like I have repeatedly stated, I rely on easy and quick meals prepared under 30 minutes during busy days. When I go to Whole Foods Market, I always purchase chicken breasts. I usually "pre-season" my chicken overnight with onion powder, garlic powder, salt, pepper, and a couple dashes of Worcestershire sauce (a favorite). I love to use panko breadcrumbs (another favorite)...the crunch is so satisfying!
I place the chicken breasts into each "dunking station," which consists of flour, paprika, a little salt; beaten eggs; and panko breadcrumbs. I have also replaced the beaten eggs for plain yogurt in the past...
I place each chicken breast in a medium-hot pan with canola oil until they become golden brown, and finish them off in the oven...
With a bag of salad in my fridge, it's a perfect meal...
This meal was accompanied with a parmesan and peppercorn creamy dressing, topped with shredded parmesan...
This following meal was joined with a mixed salad, topped with a mixture of yogurt dressing and sriracha, along with some shredded parmesan...
This meal was combined with arugula, topped with chopped pancetta that was quickly broiled in the oven, with a creamy yogurt dressing...
For this following meal, I cooked some chopped bacon in a medium hot pan and set aside. With the residual bacon fat, I browned the chicken breasts for approximately 3-5 minutes on each side and finished them off in the oven. I also sauteed some green cabbage with minced garlic, and topped the meal with the bacon "crumbles." This whole process took approximately 45 minutes to prepare...
With a glass of your favorite white wine or light red, it makes a perfect ending to a hectic day!
