Cheesy Potatoes
Ok, this following recipe is mostly a side dish, but I have eaten it as a main dish with a salad on busy days. I often make this dish on the weekend because it's one of Mr. Man's favorite comfort foods. As I was browsing through The Pioneer Woman's recipes, I stumbled upon this easy and quick dish. It has a few of my favorite things...cream, cheese, and more cheese...just perfect for a chilly weekend!
I added the flour, minced garlic, a generous amount of salt (you have to penetrate the potatoes), pepper, half & half (instead of heavy cream), and fat free milk (instead of whole) in a separate bowl. I love these glass prep bowls from Williams Sonoma...
I greased the pan as directed, but as usual, I deviated from the original recipe by peeling the skin off the potatoes...
I added the chopped potatoes to the greased pan...
I added the mixture to the potatoes...
I covered the pan with foil and placed it in the preheated oven at 400 degrees. I kept it in the oven more than the suggested time, and removed the foil as directed. I placed it back in the oven for another 20-25 minutes. After that time was complete, I shredded some sharp cheddar cheese....and a little leftover parmesan on top.
I placed it back in the oven for about 5-10 minutes or until melted...
For this following meal, I accompanied the "cheesy potatoes" with my panko-crusted shrimp...
The potatoes, which I combined with leftover frozen peas, were accompanied with panko-crusted pork tenderloin...
I prepared these potatoes on New Year's Eve for Mr. Man, topped with parsley...perfect with champagne!
