Chorizo and Kale Hash
Like I stated in my last post, preparing dishes that can be eaten during breakfast and dinner is a plus. I was really inspired to prepare some new dishes after my trip to California (stay tuned to future posts). I wanted to try an easy and simple dish incorporating chorizo, and when I saw the package at Whole Foods Market, I couldn't resist. Here are my ingredients: raw jumbo shrimp, potatoes, chorizo, half of an onion (other half used in a previous dish lol), and rainbow chard (absolutely love all the vibrant colors)...
First, I washed and scrubbed my potatoes, chopped them into small cubes, and placed them into a pot with hot, boiling, salt water. In a large skillet, I added some vegetable oil to a medium-hot pan. I removed the casings from the chorizo and added them to the pan. I removed the cooked chorizo into a separate dish (paper plate had to suffice lol), while the rendered fat remained...
With the rendered fat from the chorizo, I added the chopped onion. When the onion became translucent, I added the chopped swiss chard (don't forget to wash them first), and added an additional pinch of salt, pepper, and paprika. Lastly, I added the drained potatoes and chorizo after the chard wilted a bit...
I quickly fried some panko-crusted jumbo shrimp to accompany this quick dish. My post on my panko-crusted shrimp can be found using the link provided...

After a 24-hour call, this side (or main!) dish is also perfect for breakfast. I prepared some eggs in the morning and had a glass of cava!
