Shrimp Guacamole

For this Memorial Day weekend, I wanted to prepare something very light and very easy to assemble.  I started with the following ingredients from Whole Foods Market:  cilantro, red onion, avocados, tomatoes, lime, jalapeno.  I also purchased my favorite jalapeno tortilla chips...I can munch on these all day lol!  I am addicted to their blue corn and cheddar versions as well...




I also couldn't resist these cooked peeled shrimp....




I removed the tails off the shrimp and chopped them up...




I chopped up the red onion and tomatoes...




I minced the jalapenos...




The avocados...




I roughly minced some cilantro on top...




After adding some salt and lime juice, I mixed the contents...




With a beer handy, I was ready to dig into my own version of pico de gallo!  You can leave out the shrimp and keep it traditional, or you can add fruit, such as mango or papaya...either way is delicious!
