Reminiscing...

After my visit to California, I was motivated to prepare some dishes that I have never made before.  One such dish was inspired by my recent visit to Stefan's LA Farm in Santa Monica. Once I indulged in their duck confit and pork cheek risotto (and nibbed on Mr. Man's crispy scallops over a bed of sweet corn puree, topped with pumpkin seed oil and crispy parsnips), my procrastination subsided...





Here are my ingredients from Whole Foods Market:  sea scallops, chicken broth; carnaroli rice, butternut squash, not pictured...
