Lamb shoulder chops with sauteed kale...

Have I mentioned that I love lamb?  LOL!  Like I stated in my last post, when I am not able to purchase a rack of lamb, I rely on lamb shoulder chops.  Here are my following ingredients from Whole Foods Market:  lamb shoulder chops and kale...

As usual, I like to season my meat overnight or at least a few hours before cooking.  I seasoned the lamb with garlic and onion powder, salt, pepper, and a little Worcestershire sauce.  I used my favorite Calphalon grill pan and placed a little oil on each lamb shoulder chop.  I also let some butter melt in the pan...

I "grilled" each side for about 3-5 minutes and placed it in the oven on broil for a couple of minutes.  I simply sauteed the kale (I didn't have any minced garlic this time around), and I enjoyed this meal with some leftover mashed potatoes...just so easy and quick!

A little close-up...

If you look closely, I already have the cork removed from the red wine.  Enjoy!
