Pasta with bacon and mushrooms for Dr. Man...

Like I stated in my last post, I love to prepare original dishes for Dr. Man, but I also like to get inspiration from other cooks/chefs as well.  One of the dishes he enjoys was made by The Pioneer Woman.  It's such a simple dish but it is oh-so satisfying.  Here are my following ingredients for this wonderful meal:  bacon, leftover Chardonnay (lol), angel hair pasta, bella mushrooms, and scallions.




First, I chopped the bacon into little cubes and placed them in a medium-hot saucepan with olive oil.  Once the bacon browned, I removed them from the heat and set aside.  I added the mushrooms, along with some minced garlic, to the rendered bacon fat in the pan...




Once the mushrooms turned a golden brown color, I added the white wine...




When the white wine reduced to half, I lowered the heat to medium-low.  Soon afterward, I added the heavy cream and half & half.  Once it thickened, I added the scallions, bacon, and shredded parmesan cheese...




With a glass of the remaining Chardonnay, more parmesan cheese and a sprinkle of parsley, I was ready to dig in...
