Rediscovering Trinidad & Tobago

Before Dr. Man started his fellowship, my parents wanted to return to my father's homeland, Trinidad & Tobago.  I haven't been to this island for the past 10 years, so we quickly accepted the invitation.  I thought it would be wonderful to show Dr. Man where my father grew up.




The two islands are different; Tobago is tranquil with beautiful beaches, while Trinidad is bustling, faster-paced, industrialised, and quite festive.  We started our journey in Trinidad.  Before heading to our hotel, my father wanted to make a stop at Tunapuna to eat one of his favorite fast foods...doubles.  "His guy" didn't serve doubles any longer, but he presented channa (chickpeas), cheese, and pepper sauce in bread...





After that light snack, my father drove to another area where they serve doubles at the roadside. Most, if not all, Trinis love their doubles.  It consists of two pieces of fried dough (barra), filled with curried channa (chickpeas) and spiced with cucumber, mango, and pepper sauce...






After this "snack," we also made one more additional stop to indulge in some mango chow and other treats along the roadside.  "Chow" is a ceviche of sliced green or half-ripe fruits like mango, pineapple, or cucumbers, seasoned with salt, hot pepper, and a little lime juice and sugar to taste. I indulged in some mango chow, but I also couldn't resist the scenery...





After enjoying some of the sights of Port of Spain, we finally arrived at our accommodations in Trinidad, The Hilton.  I haven't seen this hotel since their renovations and I was excited to see the changes...





While we were all happy with our suite accommodations, it was disappointing to not receive rooms on the renovated side of the hotel...




After a look outside on our balcony, we headed to dinner with friends at Sweet Lime Restaurant. My family indulged in their specialty drinks and appetizers before our main courses.  My mother and I had their delicious curry lobster dish, with white rice and steamed vegetables.  I need to make this dish one day...





After a delicious dinner and a night at the casino, we returned to our hotel to rest up for the next day....
