Creamy Herbed Scalloped Potatoes

Like I have stated in previous posts, I love reading my favorite recipes and changing them a bit.  Here are my following ingredients: white onion, Philadelphia cream cheese, and russet potatoes...



I allowed a whole stick of butter to melt in a medium hot pan.  After the butter melted, I added chopped onions.  After the onions became slightly soft, I added the cream cheese to the pan.  Since I did not have any whole milk, I added fat free milk with heavy cream.  I also added some finely chopped parsley and sage (ah, my daughter's name)...





After placing my pan off the heat, I used a mandoline to slice up my peeled potatoes...



The potatoes are placed in a buttered baking dish, and the contents in the pan are poured on top.  For extra decadence, I added shredded parmesan cheese on top, and placed in the oven at 350 degrees for 45 minutes (or until bubbly)...



After removing from the oven, let the dish remain aside for 15 minutes. Enjoy alongside your favorite main dish, or enjoy alone!
