Cauliflower "Steak"
It has been some time since I last wrote about my cooking experiences. With dermatology residency graduation approaching, a growing toddler, studying for boards, building a home, and life in general with Dr. Man, I have fallen behind on my wonderful hobby. However, it has not stopped me from cooking and picture journaling.
One evening, Dr. Man stated that he wanted to start a plant-based diet 3-4 days per week. No problem, I thought, but how can I make vegetables the star of the show?
After a trip to Whole Foods Market, I purchased cauliflower, kale, and sweet potatoes....

The cauliflower was placed into the oven to broil. While it was broiling, I washed my kale and set aside. I peeled, diced, and seasoned the sweet potatoes with sea salt and pepper after coating with olive oil...
I removed the cauliflower from the oven once tender, sprinkled some grated Parmesan, and returned them to broil for a few minutes until golden brown. Once the "steak" was removed from the oven, I placed the sweet potatoes into the oven to broil for several minutes. After broiling, I sauteed the sweet potatoes and kale with roughly minced garlic...
I wanted the sweet potatoes and kale to be a side dish to the "steak." And boy was it delicious....and most importantly, Dr. Man approved! He wanted a second serving of his "steak" and potatoes haha!
