Avocado Toast

I know...I know...most people are tired of the avocado toast fad.  Well, I never understood the fascination with this green goodness smeared over dry toast.  Why would I spend money at a restaurant for this? Instead, I thought I would give it a try at home before I rendered a final verdict.

After making different versions, I truly believe that avocado toast needs a few important things.  They include a great bread.  I love the collection of breads at Wegmans, such as their cheddar bread, cheddar-bacon bread, or my ultimate fav, cheddar-jalapeno bread.

It not only needs a little pinch of sea salt, but it must have a tiny splash of acid, preferably lime for me.  There are times I add some minced jalapenos but I usually omit this if I am using a cheddar-jalapeno bread.

Optional accoutrements include the following: sliced hard-boiled eggs (no runny yolks for me...makes me a bit queasy), cherry tomatoes, sliced tomatoes, bacon, mixed with eggs, and my ultimate fav, roughly chopped lobster.  If I add lobster, you must know that I change the name into my "Bougie Avocado Toast" lol.

Cheddar bread, sliced hard-boiled eggs, cherry tomatoes, bacon, avocado (sea salt, splash of lime juice); my take on an "avocado BLT"

Cheddar-jalapeno bread, cherry tomatoes, avocado (sea salt, splash of lime juice)

Cheddar-jalapeno bread, strips of bacon, avocado (sea salt, splash of lime juice)

Cheddar-jalapeno bread, roughly chopped bacon, avocado (sea salt, smashed hard boiled eggs, chopped jalapenos, splash of lime juice)

Cheddar bread, cherry tomatoes, crumbled bacon, lobster, avocado (sea salt, splash of lime juice)

Bacon-cheddar bread, sliced tomatoes, crumbled bacon, lobster, avocado (sea salt, splash of lime juice)

Whatever your version, I am a believer of this "fad." I hope it's here to stay because I cannot see a weekend without a version!
