I quickly made this post-call meal the day of Hurricane Sandy; single-cut lamb chops with sautéed kale and mashed potatoes. You can tell I was in a hurry because I didn't even take the time to remove the stems from the kale. Looking back, this meal was prepared and eaten about 2 hours before my power cut off for the next week. At least I had a bottle of red wine lol!
